The History and Significance of National Barbecue Month
As the spring weather warms and outdoor gatherings become more frequent, May stands out as the official National Barbecue Month. This celebration of all things grilled, smoked, and flame-kissed marks the beginning of the outdoor cooking season across America. The tradition of designating May as the month for barbecue began decades ago as a way to honor one of America’s most beloved cooking methods.
Barbecue itself has deep cultural roots across the United States, with regional variations that showcase unique flavors from the tangy vinegar-based sauces of North Carolina to the sweet, tomato-rich styles of Kansas City. The art of barbecue represents more than just a cooking technique—it’s a gathering point for communities, a celebration of craftsmanship, and a canvas for culinary creativity.
At St. Charles Trading, we understand that exceptional barbecue starts with premium ingredients. National Barbecue Month provides the perfect opportunity to explore new flavors and techniques that can transform your outdoor cooking from casual to extraordinary.

2025 Barbecue Flavor Trends
Global Influences Taking Center Stage
This year’s barbecue scene has seen an explosion of globally-inspired flavors making their way to American grills. Ingredients like gochujang, chimichurri, and za’atar are transforming traditional barbecue recipes into international culinary adventures. These bold flavors add complexity and depth to familiar cuts of meat and vegetables.
Sustainable and Plant-Forward Options
The modern barbecue isn’t just about meat anymore. We’re seeing increased interest in plant-based grilling options that deliver on flavor while offering sustainable alternatives. Ingredients like jackfruit, cauliflower steaks, and portobello mushrooms provide substantial textures that stand up well to grilling techniques.
Craft Spice Blends
Custom spice blends are elevating backyard barbecues to restaurant-quality experiences. The trend toward unique dry rubs that combine unexpected ingredients, like coffee and cocoa, with traditional spices, shows that barbecue enthusiasts are becoming more adventurous with their flavor profiles.
Essential Ingredients for Barbecue Success
Premium Spices and Seasonings
The foundation of any great barbecue starts with quality spices. At St. Charles Trading, we pride ourselves on sourcing the finest seasonings from around the world. From single-origin black peppercorns to specialty smoked paprika, our selection ensures that your dry rubs and marinades start with the best possible ingredients.
Artisanal Sugars and Sweeteners
The caramelization that occurs during barbecuing requires the right balance of sweetness. Our selection of specialty sugars, including turbinado, muscovado, and maple sugar, provides options that go beyond standard white sugar, adding notes of molasses, caramel, and maple that complement smoky flavors.
High-Quality Acids and Vinegars
The perfect barbecue sauce balances sweet, spicy, smoky, and tangy elements. Our premium vinegars, from aged balsamic to craft apple cider varieties, provide the acid component that brings barbecue sauces to life and tenderizes meats in marinades.
Specialty Oils
Whether you’re preparing marinades or finishing dishes, the right oil can make all the difference. Our selection includes everything from high-heat options like avocado oil to finishing oils infused with herbs and spices that add the perfect final touch to grilled dishes.
Beyond the Basics: Elevating Your Barbecue Experience
Smoke Ingredients
The flavor of smoke is central to great barbecue. Beyond traditional wood chips, consider incorporating ingredients like smoked salt, smoked honey, or even tea leaves for smoking to add nuanced flavors to your grilled creations.
Finishing Touches
The difference between good and great barbecue often comes down to the finishing touches. Products like flavored finishing salts, compound butters, or infused honey can elevate a dish from ordinary to memorable.
Marinades That Matter
A great marinade does more than add flavor—it transforms the texture and moisture content of your grilled items. Our selection of premium ingredients allows you to create marinades that tenderize and infuse meats with complex flavor profiles.
St. Charles Trading Special: Spice-Rubbed Barbecue Ribs with Maple-Chipotle Glaze

INGREDIENTS:
Making the Spice Rub:
- 3 tablespoons St. Charles Premium Smoked Paprika
- 2 tablespoons St. Charles Garlic Powder
- 2 tablespoons St. Charles Ground Cumin
- 1 tablespoon St. Charles Ground Coriander
- 2 tablespoons St. Charles Dark Brown Muscovado Sugar
- 1 tablespoon St. Charles Pink Himalayan Salt
- 2 teaspoons St. Charles Fresh Ground Black Pepper
- 1 teaspoon St. Charles Ground Chipotle Pepper
CREATING the maple-chipotle glaze:
- 1/2 cup St. Charles Pure Maple Syrup
- 1/4 cup St. Charles Apple Cider Vinegar
- 2 tablespoons St. Charles Chipotle Pepper Puree
- 2 tablespoons St. Charles Tomato Paste
- 1 tablespoon St. Charles Worcestershire Sauce
- 1 teaspoon St. Charles Garlic Powder
- 1/2 teaspoon St. Charles Smoked Salt
For the ribs:
- 2 racks of pork ribs, membrane removed
- 1/4 cup yellow mustard
Instructions:
- Prepare the spice rub: Combine all spice rub ingredients in a bowl and mix thoroughly.
- Prepare the ribs: Pat ribs dry with paper towels. Brush a thin layer of yellow mustard on all sides of the ribs (this helps the rub adhere). Apply the spice rub generously to all sides of the ribs, pressing it into the meat.
- Rest the ribs: Wrap the seasoned ribs in plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to penetrate the meat.
- Prepare your grill: Set up your grill for indirect heat, aiming for a consistent temperature of about 250°F. If using a charcoal grill, add some soaked wood chips for additional smoke flavor.
- Slow cook the ribs: Place the ribs on the indirect heat side of the grill. Close the lid and cook for about 3 hours, or until the meat begins to pull back from the bones.
- Make the glaze: While the ribs are cooking, combine all glaze ingredients in a small saucepan. Bring to a simmer over medium heat, then reduce heat to low and simmer for about 15 minutes, stirring occasionally, until the mixture thickens slightly.
- Apply the glaze: During the last 30 minutes of cooking, brush the ribs with the maple-chipotle glaze every 10 minutes to build up a sticky, flavorful exterior.
- Rest and serve: Remove the ribs from the grill and let them rest, loosely tented with foil, for 10-15 minutes. Cut between the bones and serve with any remaining glaze on the side.
